Quick, easy and delish! Julie's incredible rocket salad recipe

This salad is absolutely delicious; it's always popular with my guests and it's super forgiving too.

My friend Julie is truly the 'hostess with the mostest.' We all devour this salad every time she makes it.

Enjoy!

Julie's Rocket Salad

Ingredients:

Rocket

Mangoes and/or strawberries and/or kiwis

Craisins

Caramelised pecans

Avocado

Dressing:

Equal parts olive oil, balsamic vinegar and honey

Method:

Chop up the rocket roughly and lay on your prettiest flat platter.

Lay the fruit on top and then sprinkle the craisins and nuts.

Pour the dressing on just before serving.

Chef's tricks:

This salad is super forgiving.

You can use chopped lettuce instead of the rocket.

You can use any fresh fruit which your family enjoys.

You can leave out the avocado if you don't have it / your family doesn't like it.

You can use other nuts like cashews.

You can add pomegranate seeds for a fun yom tov twist.

You can serve it on individual plates with two breadsticks placed on top as 'cutlery'.

Note: We don't eat any nuts from Rosh Hashanah until the end of Sukkos. If you have the same minhag, feel free to replace the nuts with croutons.
